Chili Lime Steak Tacos with Mango Slaw

It may be (food) Friday today but that just means we are that much closer to taco Tuesday next week. And do you know what you’re making? No, not yet? Well, then I have the perfect taco Tuesday taco recipe for you! Get ready to meet your new favorite steak taco recipe.

We love tacos in this household, in fact, if meal planning was left up to my husband, we’d eat tacos at least twice per week! Luckily, I do the meal planning and cooking round here and I try to limit tacos to their celebratory day: Tuesday.

We have a few go-to recipes when it comes to our favorite tacos, these ones are pretty well worked out and tweaked over time until I can basically recreate them with my eyes closed.

This particular steak one is super quick, easy, and delicious! The hardest part is literally slicing up the mango (is it just me or are mangoes so messy?!) for the slaw. Seriously. Even grilling up the steak is super quick and simple thanks to the thinner cut of meat you use. It’s the perfect summer weeknight meal.

Chili Lime Steak Tacos with Mango Slaw Recipe

Prep Time: 20 minutes

Cook Time: 20 minutes

Yields: 4 servings (3 tacos each)

Ingredients:

-2 lbs. beef flank steak

-3 cups shredded green cabbage (can use purple too)

-3/4 of a large mango cubed (or whole small mango cubed)

-1/4 cup greek yogurt

-1/2 tsp. honey/agave

-1/2 tbsp. lime juice (juice of 1/3 lime or so)

-salt + pepper to taste

-handful cut radishes

-corn tortillas

-sliced up avocado

-optional: favorite salsa, fresh cilantro, cheese

Steak Marinade:

-2 tbsp. olive oil

-2 tbsp.  honey

-juice of 1/2 lime

-1/2 tsp. chili powder

-1/2 tsp. paprika

-1/4 tsp. salt

-sprinkle red pepper flakes

Instructions:

Begin by stirring up your steak marinade in a bowl. Add to a large ziplock bag along with your steak, shake it up to evenly disperse marinade and put in your fridge for 2-5 hours ahead of cooking. Prepare your mango slaw in a large bowl by slicing up and adding your mango, cabbage, greek yogurt, lime juice, honey/agave, and salt/pepper. Mix well and set aside. Once all other ingredients have been assembled, heat and spray your grill and place the steak on it. Cook until meat is medium (warm pink center) when cut down middle and remove, roughly 10-15 minutes. Allow steak to cool slightly before cutting into strips. Now load up your tortillas and kick back.
