Chicken Sausage Tortellini with Broccoli

Food Friday is here! I won’t bore you with a huge back story on this recipe since it’s pretty straight forward: sometimes I just don’t feel like really cooking. I want to throw a bunch of ingredients I have handy together and I want it to taste good. So there you have it. This recipe is my throw-together-in-30-minutes-dinner recipe. I hope it saves you some time and energy in the kitchen too.

Chicken Sausage Tortellini with Broccoli recipe:

Prep time: 10 minutes

Cook time: 15 minutes

Yields: 4 servings


-1 lb. cooked chicken sausage (we throw ours in the oven while we prep everything else)

-1 package frozen tortellini undercooked (blanch for just a few minutes so it is no longer frozen but not yet cooked)

-2 broccoli heads chopped and blanched (can sub broccolini)

-1/2 bag spinach or chopped kale

-fresh squeezed juice of 1/2 lemon

-1/2 cup chicken broth

-1/4 cup parmesan cheese

-salt and pepper to taste

-olive oil


Begin by cooking your chicken sausage until it is no longer pink inside and blanching your tortellini followed by broccoli. Next, heat up some oil in a large pan and add your cooked sausage and broccoli. Saute for 5-8 minutes and add your chicken broth, salt/pepper, and lemon juice. Once it is combined well and some of the liquid has absorbed add in your tortellini and spinach or kale and parmesan cheese. Mix well and allow to simmer for a few minutes. Divvy up onto plates and enjoy!
