Happy Friday! Recently our favorite kind of grilled chicken has been a super simple italian marinaded one. It’s just so easy to throw on salads, pair with clean healthy side dishes and even throw into a filling pasta dish. Plus it’s just such a darn easy marinade to throw together and you can use it as a salad dressing I thought I’d share it with you all too.
For years now I have been doctoring up my very own italian seasoning. It may have started because I had been accumulating so many spices and seasonings that it felt silly and wasteful not to make my own italian seasoning and buy one from the store. But it has continued because I just think it tastes so much better than store bought. Plus you can easily use it to create dressings, season dishes and make saucy marinades without having to buy additional products.
Italian Seasoning and Marinade Recipe

-3 tbsp. dried basil
-3 tbsp. dried parsley
-1 tsp. garlic powder
-1 tsp. onion powder
-1 tsp. thyme
-1 tsp. rosemary
-1/4 tsp. black pepper
-1/4 tsp. red pepper flakes (optional)
-2 tsp. italian seasoning
-2 tbsp. olive oil
-1 tbsp. balsamic vinegar or red wine vinegar
Mix all seasonings in a small mason jar and seal for storage for up to 6 months. Be sure to mix contents well before use each time. For the marinade I like to use a large tubber wear or a gallon sized zip lock bag. I typically add in my oil, vinegar and seasoning then seal and shake well to mix before adding in the chicken. Shake well to evenly coat chicken and allow to marinate in fridge for at least 4 hours and up to overnight.
